Years of making
A dough of our own.
My grandmother, Florenza, taught me how to make pan pizza when I was ten, in her kitchen in East Boston.
She never used a recipe. She did it all by eye.
Over the years, I trained with master pizzaiolo Massimiliano Saieva and professional bread baker Chef Chris French. Getting this dough right took about three years.
